Gluten Free AP Flour Tips

1.  Weigh your ingredients in grams using a Kitchen Scale for the most accurate and consistent results. 

2. Ensure you include a binder like xanthan gum, guar gum, or psyllium husk in your recipes. Many "measure-for-measure" pre-made blends already include xanthan gum—always check the label. 

3. Use a blend that combines different flours (like sorghum or millet) with starches (like tapioca or potato starch) to mimic the structure and texture of all-purpose flour. 

4. Mix your ingredients only until they are just combined. 

5. Allow your dough or batter to rest for 20 to 30 minutes (or even overnight in the fridge) before baking. This allows the starches and binders to fully hydrate.
